I love spring, and I love salads! This recipe is the perfect marriage of both. My favorite salad right now is this Strawberry-Beet-Feta Salad (pictured below with the 3-ingredient Vinegarette - recipe below).
This salad starts with my go-to base for all salads: Spring Mix Lettuce, Arugula, and Shredded Green Cabbage. These three items have permanent placement on our weekly grocery list because we use them at almost every meal!
The salad base is then topped with thinly sliced red onion, sweet strawberries, beets, feta cheese, and raw pepitas. The sweet earthiness of the beets and strawberries taste absolutely divine with the tanginess of the feta cheese. We then top it all off with the simplest vinegarette you will ever make; these three ingredients are shaken in a small mason jar: Balsamic Vinegar (about 1/4 cup), Avocado Oil (use about double the amount of the vinegar), and Everything but the Bagel Seasoning (to taste).
