Cha-Cha-Cha-Chia Pudding

How many of you had a chia seed plant in the 80s? Does the jingle "Cha-Cha-Cha-Chia!" sound familiar? Who knew that those silly seeds would be touted as a superfood 30+ years later!


Chia seeds are rich in polyunsaturated fat as omega-3 fatty acids, fiber, protein, calcium, phosphorus, and zinc. This Chia Pudding makes a perfect snack when made with coconut milk and topped with some fresh fruit. It is satiating and delicious and has only 10-15 carbs per serving (8 carbs without toppings)! Chia Pudding has become a staple in our house. I eat this as a snack/meal a couple times a week and Ava LOVES it too.

I use cute little 4-ounce mason jars to prep these for the week, and I always have a couple of empty jars at the ready when I open a can of coconut milk for partial use in another recipe. Prepping the strawberry puree and blueberries at the beginning of the week ensures that this delicious snack is quick and easy.

Fill the jars with 2 T. of organic chia seeds and then fill to the rim with organic canned coconut milk. You can shake the coconut milk real good to incorporate the thicker cream on top, or set it aside for use in your next batch of whipped coconut cream. I add a couple drops of Stevia, some organic bourbon vanilla extract, and a pinch of cardamom. Then, place the lid firmly on the jar and shake, shake, shake! I leave them on the counter for about 10 minutes until they start to gel up, then I give them another good shake before placing them in the refrigerator. Let them rest in there for 2-4 hours or overnight until they gel up to a creamy and decadent texture.

The topping options for Chia Pudding are endless! I like to keep it simple and healthy with fresh strawberry puree (I put several fresh, organic strawberries in the NutriBullet and blend until pureed), with fresh organic blueberries, and hemp hearts. I encourage you to make your own fun combinations!
